There was no need to worry about the front door opening at night, as it was tightly locked. As is the custom to bake a prosphora on each Friday, so today I baked two, one for Sunday and a smaller one for the feast of the Dormition of the Theotokos next week. Alas, the larger one was not successful, as cracks appeared on the surface. Even while kneading the dough, I had a feeling that it might not come out well. I think that the dough was too stiff, so that when the prosphora began to rise in the oven, the surface could not stretch adequately and thus cracks appeared. As a result, I baked another one in the evening, making certain that the dough was soft and pliable, and the result was excellent. What did we do with the unsuccessful one? We simply ate it as ordinary bread. Many thanks for the encouraging words from Florida concerning this diary. I certainly hope that readers everywhere, not just in Florida, will continue to read the daily entries.
